Arctic char – an arctic delicacy from Lithuanian RAS, study visit to JSC Noras LT

Arctic char – from a hatchery to the final product in the recirculating aquaculture system (RAS), this is the way Arctic char is produced at JSC Noras LT, a company in Klaipeda region in Lithuania, hosting Aqualoop project partners in April 2024.

Arctic char (Salvelinus alpinus) is a cold-water fish in the family Salmonidae, native to alpine lakes and arctic and subarctic coastal waters. Its distribution is circumpolar. No other freshwater fish is found as far north. Arctic char is as high in protein as cod, but is most prized for its unsaturated fatty acids. Among the polyunsaturated amino acids, Omega 3 compounds are the predominant ones. Arctic char has more vitamin D and selenium than Atlantic salmon. According to nutritionists, this fish is a great source of protein, vitamins and Omega 3.

Noras LT has developed a recirculating aquaculture system to grow Arctic char in a sustainable and environment friendly way to deliver the finest quality fish. By bringing fish farmed in aquaculture to market, the company not only reduces the number of catches in natural waters, but also ensures safe farming. The farm complies with the highest biosecurity requirements, creates excellent conditions for the growth of fish, so they are raised without growth hormones and antibiotics. The farm uses only clean, clear, cold water. For all grow stages water is taken from freshwater wells 120 meters deep. The farm does not use genetically modified products at any stage, starting from caviar to the last production cycles.

Noras Artic char is a perfect choice for top gourmet restaurant market as a graved, smoked or tartar as starter. Low fat content makes it an ideal choice for sashimi and sushi. For the retail market the fish is offered filleted, whole, or in small size plate portion.
